Knob Creek 12 Year Old Kentucky Straight Bourbon Whiskey 100 Proof is Booker Noe's Clermont bourbon given twelve years in new #4-char American oak, drawn from the center of the rackhouses where the temperature stays even. It is a permanent 12-year bottling at 100 proof — oilier, with dried cherry and baking spice from the longer wood time. Pour it over a large cube.
Brown sugar, vanilla, and toasted oak open, then caramel, dried cherry, and orange zest fill a full, oily sip. Leather and a hint of cocoa sit in the middle. The finish is long: tobacco, black pepper, and warm vanilla.
