Matasanta Sierra Negra Mezcal
Matasanta works in Sola de Vega, in the southern reaches of Oaxaca, and this bottling comes from Sierra Negra agave — a large, slow-growing variety that gives the spirit real weight. The agave is cooked in an earthen pit and the distillation happens in clay pots, the older and quieter of the two mezcal traditions.
Roasted agave sits at the center, sweet and fibrous, with citrus lifting the edges. Underneath there is a cool green-herb streak and a mineral, wet-stone quality that clay distillation tends to bring forward. The smoke is gentle rather than assertive, more like the memory of a fire than the fire itself, and it trails off into damp earth.
Additive free. Poured neat in a small copita, at room temperature, it opens up over a few minutes. 750 mL.
