Old Man Winter Bourbon Whiskey is Preservation Distillery’s Bardstown micro-batch: six-year Kentucky pot-still wheated bourbon married with older Indiana rye bourbon, four grains, one to three barrels, unfiltered, then proofed to 109.8 (54.9% ABV) with the farm’s limestone water. Wheat keeps it round; the rye and extra age bring fruit and spice. A cold-night bottle when you want that dusty, mid-century character at near cask strength.
Caramel and honey open over orchard fruit—melon, grape, apricot. Rye spice and white pepper stand out on the palate, with a hint of leather; the mouthfeel is rich and coating, and the finish runs long on fruit, pepper, and dry oak.
