The Last Cask Barbados 17 Year Old Rum
Barbados has a way of making rum that feels rounded and generous rather than sharp, and seventeen years on the island have done exactly that here. Tropical maturation moves faster than it does in cooler climates, so the ex-bourbon cask has left its mark deeply: coconut and vanilla sit close together, sweetened by caramel that lingers well past the swallow.
Tropical fruit leads the nose, ripe and open. Baking spice arrives later, warming rather than biting, with oak underneath holding everything in shape. This is cask strength from a single barrel, so it drinks with real weight and concentration. A few drops of water will open the fruit further if you want it softer.
Bottled at 750 mL. A rum with enough character for slow sipping on its own, and enough backbone to stand up in a serious old fashioned when you want one.
