More than three years in American oak, with a final month spent in small barrels, have taken this Blue Weber agave spirit somewhere rich and rounded. Roasted agave still sits at the center, sweet and earthy, but it now shares the space with vanilla and caramel that feel closer to dessert than to the field.
There is cherry underneath, dark and a little jammy, and a thread of maple that keeps the whole thing soft. Baking spice and oak arrive late, drying the sweetness just enough to keep it from turning heavy. At 80 proof, the texture stays gentle and the alcohol never pushes ahead of the flavor.
Los Altos, the highland country of Jalisco, tends to give agave this kind of ripe, fruit-forward character, and the extra añejo aging leans into it rather than covering it up. A 750 mL bottle worth keeping within reach for evenings that deserve a little more than the usual.
