Bowmore 12 Year Old Islay Single Malt Scotch Whisky is the distillery's benchmark single malt, aged 12 years and bottled at 80 proof. Bowmore still turns part of its barley by hand on floor maltings and dries it in peat smoke, a softer smoke than the island's heaviest malts. The whisky is then married from American oak ex-bourbon casks and European oak Oloroso sherry casks. The bourbon wood brings lemon and honey. The sherry brings a thread of dark chocolate under the earthy smoke.
Fresh lemon and heather honey lead, with soft peat and dark chocolate through the fruit. Whisky Advocate found peach, vanilla, and a hint of brine on a rounded palate, then cocoa and citrus as the woodsmoke fades. The finish is long, sweet, and smoky.
