Cascade Moon 15 Year Old Barrel Proof Tennessee Whiskey is a limited Cascade Moon release from Cascade Hollow in Tullahoma, the distillery behind George Dickel. Nicole Austin found the barrels on the lower, cooler tiers of the single-story rickhouses while tasting for Dickel’s single barrel program. A mash of corn, rye, and malt went into new charred American oak at 115 proof and, after 15 years, came out at 79.8 proof. Below 80 proof the legal class is spirit distilled from grain, so she bottled those barrels at that strength on their own. What you get is 15 years of cool-warehouse oak, light enough to drink straight through, with the age still in the glass.
Vanilla frosting and caramel open the glass, with oak underneath and a popcorn note that keeps turning up beside them. The body is light and easy. Sweetness leads, then the finish dries into leather and oak, which is where the 15 years stay.
