Down Island Spirits makes this cask-strength Brazilian rum in a bold, spice-led style. Distilled in 2011 and aged for 12 years, it spent 6 years in Amburana casks before another 6 years in American oak casks. The two-stage maturation brings warm spice and wood notes into focus while leaving room for the rum’s grassy character.
Burnt sugarcane gives the palate a deep, bittersweet opening, with fresh grass providing a clear herbal contrast. Star anise follows with a darker aromatic edge, and oak anchors the finish. At 110.2 proof (55.1% ABV), the flavors come through with plenty of concentration and warmth. This 750 mL rum can be poured neat for its full intensity or served over a large cube for a slower, more relaxed sip.
