Holmes Cay Jamaica ITP 2007 15 Year Old Single Cask Rum
Holmes Cay bottles single casks of Jamaican rum without adding anything to them, and this one comes from Trelawny, distilled in 2007 and left alone for fifteen years in an ex-bourbon cask. Tropical aging works quickly, and you can taste that concentration here.
The fruit is the first thing you notice: overripe banana, almost jammy, with pineapple right behind it. Underneath sits molasses, thicker and darker, and a twist of citrus peel keeps the whole thing from going heavy. Esters run through it start to finish, that funky Jamaican signature, with oak holding the back end steady. It's bottled at cask strength, so a few drops of water will open the fruit up if the intensity is more than you want.
A 750 mL bottle of straightforward, honest pot-still character. Good neat, and sturdy enough to stand up in a daiquiri if that's how you drink rum.
