Matasanta Tepeztate Mezcal
No age or proof is printed on this one, and it doesn't need either. Tepeztate is a wild agave that takes many years to mature, and mezcal made from it tends to be green, brash, and alive. This one is additive free, so what reaches the bottle is agave, fire, and copper, nothing else.
Roasted agave leads, sweet and slightly charred from the earthen pit where the piñas were cooked. Green herbs cut through it with a fresh, almost vegetal snap, and citrus keeps the whole thing bright. Underneath sits a stony, mineral edge that gives the palate some grip. Tropical fruit turns up late, and the smoke stays on well after the sip is gone.
From Oaxaca, in a 750 mL bottle. Good sipped slowly at room temperature, with an orange slice if you like.
