Real Minero Pechuga Mezcal
Oaxaca is where this style of mezcal makes the most sense: Espadín agave roasted underground, then distilled a third time with seasonal fruit, grains, nuts and poultry suspended above the still. That final pass is what gives a pechuga its particular softness, and this one wears it well.
Tropical fruit and honey lead, rounder and sweeter than you might expect at 100 proof (50% ABV). Underneath sits a creamy weight that carries citrus and toasted nuts along with it. Smoke is present but gentle, more damp clay and warm stone than campfire, with a thread of spice running through the close.
Additive free, and bottled at full strength, so nothing has been smoothed over or dialed back. Serve it in a copita at room temperature and take it slowly; the 750 mL bottle is meant to be shared with people who will notice what is in the sip.
