Rémy Martin Centaure Extra Old Cognac
Rémy Martin makes this one in the Fine Champagne style, drawing on Ugni Blanc grown in the heart of the Cognac region. Ten years in French Limousin oak have softened it into something easy to pour on a weeknight, with vanilla and a gentle woodiness sitting under the fruit rather than over it.
Stewed apple leads, sweeter and rounder than fresh fruit, with quince alongside it. Honey fills in the texture, and there's a thread of apricot that shows up as it warms in the hand. At 80 proof (40% ABV) it stays soft rather than sharp, which makes it forgiving if you're new to Cognac.
This is an everyday bottle, not an occasion one. It takes a single ice cube well without falling apart, and it works just as cleanly neat after dinner. The 750 mL bottle is the standard pour size for a home shelf.
