At 100.4 proof (50.2% ABV), this Jalisco agave spirit comes to the palate with real weight and no need to shout. Cooked agave leads, sweet and vegetal at once, and underneath it sits something earthy and stony — the kind of mineral character that comes from blue Weber agave roasted in an earthen pit rather than steamed.
Citrus brightens things as it opens, and a lift of white pepper keeps the sweetness in check. Herbs and a thread of light smoke linger once the heat settles. Ancestral distillation leaves the texture rounder and more rustic than most agave spirits from Los Valles, with more of the plant left intact in the finished liquid.
It is additive free, so what you taste is agave, fire and copper. A short pour in a clay copita or a small tumbler suits it better than anything crowded with ice. The 750 mL bottle drinks well on a Tuesday and holds up on an occasion.
