Extra añejo is the longest-aged class of tequila, and this one earns the name with over three years in used American oak bourbon casks. It comes from the Jalisco Highlands, made from Blue Weber agave and bottled additive free, so what you taste is the agave and the wood, nothing else.
Cooked agave sits at the center, sweet and earthy the way it smells coming out of the oven. Vanilla and caramel round the edges, with dried fruit underneath and a dusting of cinnamon toward the end. The oak stays light and never takes over. At 80 proof, it drinks easily and doesn't need cutting.
This is an approachable extra añejo rather than a formal one. Neat in a copita after dinner is the simplest way to drink it, and the 750 mL bottle is the sort you keep open on the shelf rather than save for an occasion.
