ASIL Raicilla de la Sierra Añejo
ASIL makes raicilla in the Sierra of Jalisco, and this añejo comes from Maximiliana agave rested in American white oak. It is additive free, so what you taste is the agave and the barrel, nothing else.
Smoked agave sits at the center of the palate, sweetened by vanilla and caramel without turning syrupy. Underneath there is red fruit, and the finish leans toward cocoa with a gentle spice that fades slowly rather than biting. At 90 proof (45% ABV) it has enough weight to feel substantial but stays easy to drink, and the oak influence reads as warmth more than wood.
Raicilla is worth knowing if you already drink tequila or mezcal — same country, different agave, different character. This one is straightforward enough for a weeknight pour and interesting enough to hold attention. The 750 mL bottle is a sensible place to start.
