Austin Hope Cabernet Sauvignon 750ml
Dry, dark, rich and plush. This is a full-bodied Cabernet with ripe fruit and a smooth, generous texture. The nose shows black cherry, burnt sugar and a hint of smoke. The palate brings ripe dark fruit, vanilla, roasted coffee and baking spice. Oak adds a creamy, toasty layer. The tannins are soft and supple, and a touch of acidity keeps the finish fresh.
Austin Hope grew up farming vines in Paso Robles and created this Cabernet to show what the region can do. Fruit comes from districts including Geneseo, Estrella, San Juan Creek and the Paso Robles Highlands, where warm days, cool Pacific-influenced nights and calcareous ancient seabed soils produce ripe, concentrated Cabernet. Lots are fermented separately and aged in French and American oak. It is bottled at 15% ABV in a 750 mL bottle.
Serve just below room temperature with grilled steak, braised short ribs or roast lamb.
