Earthy agave comes through first, greener and more savory than sweet, with a briny olive note sitting just behind it. Herbs run through the aroma, and there's a mineral edge that keeps everything clean rather than heavy. Black pepper shows up late, alongside a touch of toasted oak from the time it rested in wood.
This comes from Amatitán, in Jalisco, and it's made from Chato agave — a variety you don't see named on many labels. It's additive free, which shows: nothing has been smoothed over or sweetened up, and the agave character is left to speak plainly. At 92 proof (46% ABV) it has real presence without being hot.
A straightforward everyday bottle, and a good one to sip slowly in a small copita. The 750 mL size holds up equally well in a cocktail where you want the agave to stay audible.
