Ferrari-Carano Cabernet Sauvignon
Dry, dark, generous and savory. This is a full-bodied Cabernet with ripe fruit and a plush mouthfeel. The nose shows dried cherry, blackberry and violet, with sage and a hint of cured meat. The palate brings plum, cassis, cola and coffee, with a touch of leather. Oak adds cedar and toasty spice. The tannins are round and well framed, and the finish is long.
Ferrari-Carano has farmed Sonoma County since 1981, and the grapes for this Cabernet come primarily from the winery’s vineyards in Alexander Valley, where warm days ripen Cabernet fully. Recent bottlings blend roughly three quarters Cabernet Sauvignon with Syrah, which adds dark fruit, pepper and plushness. The wine is aged in oak barrels and bottled at 14.8% ABV in a 750 mL bottle.
Approachable now, with enough structure to hold for several years. Serve with grilled or roasted lamb, beef, pork or sharp cheddar.
