La Luna Espadín Mezcal
Nothing about this one is aged. It goes from the roasting pit straight to the bottle, unaged and additive free, so what you taste is agave and the way it was cooked. That underground roast is where the smoke comes from, and here it stays gentle rather than dominating.
Roasted agave leads, sweet and a little charred, with tropical fruit sitting just behind it. Herbs and a chalky mineral streak keep things dry through the finish, and a flick of pepper lingers after the smoke fades. Espadincillo agave from Michoacán gives it a clean, green edge that makes the bottle easy to keep returning to.
At 96.8 proof there is real presence, though it never turns hot. Drink it neat in small pours, or use it where you would normally reach for a blanco tequila. The 750 mL bottle is a sensible everyday size.
