El Dorado 15 Year Old Madeira Sweet Cask Finished Demerara Rum
This is an easy rum to pour after dinner. At 86 proof (43% ABV) it sits comfortably neat, and it takes an ice cube without falling apart. Raisin and brown sugar lead, sweet but not syrupy, with vanilla softening everything behind them. Baking spice and oak turn up on the finish and keep it from tipping into dessert.
It comes from Demerara in Guyana, where the sugarcane rums have long been known for their dark, molasses-rich character. Fifteen years of tropical aging pulls flavor from the wood faster than a cooler climate would, which is part of why this drinks with more depth than the age alone suggests.
A period in Madeira Sweet wine casks rounds out the edges and adds a touch of dried-fruit richness to the caramel already there. Good in a rum old fashioned if you want a cocktail, though it does not need the help. 750 mL.
