Fósforo Tobalá Penca Mezcal
Pour this one at room temperature and sip it slowly. At 86 proof (43% ABV) it drinks easily without feeling thin, and the texture is soft enough that it works on its own with a slice of orange nearby if you want one. White flowers and lemongrass come through bright and clean, while caramel and toasted nuts sit underneath and give the whole thing weight. Young leather and a run of warm spice keep the finish dry.
The agave is Tobalá, grown in Puebla, and the mezcal is additive free. After distillation it rests three months in glass with a cooked agave penca, a step that softens the spirit and pulls a little more of the roasted agave character into it.
A 750 mL bottle, and a good introduction to Tobalá for anyone who has mostly been drinking espadín.
