The highlands of Los Altos, Jalisco give blue Weber agave a sweeter, fruitier character, and this extra añejo leans into it. Four years in American oak ex-bourbon barrels have pulled the spirit deep amber without burying what it started as: cooked agave still sits at the center, sweet and vegetal, with vanilla and caramel wrapped around it.
There is real weight here. Dried fruit gathers underneath, and a dusting of cinnamon keeps the sweetness from turning heavy. The finish is long and dry, more pepper and oak than sugar, which is what keeps you coming back to it. At 80 proof it stays approachable rather than hot, and it is additive free, so what you taste is agave and barrel and nothing else.
A 750 mL bottle worth keeping within reach for evenings that deserve a little more than the usual pour. Serve it in a copita rather than a snifter.
